I think the true meaning of the title is clearly stated in the book. He wants to be in a big field of rye in which kids are playing in and catch them before they fall over a cliff. Catching the kids before they fall over the cliff is symbolic to catching them before they plunge into the adult life in which he thinks is "phony". At least that's what I think.
